a) LUDOVIC HAMS, subsidiary of the "Ludovic Guiraud " sausage factory created in 1946 at Nages in the Tarn, directed by his son since 1985. Production conceived from the very beginning according to the most rigorous standards (the USA FEDERAL), in a Natural reserve in the mountains.
A private laboratory provided with physical and bacteriological control and research created in 1982.
HACCP method, 1985 instituted
Trace ability of products implemented in 1996.
Three professionals, four workers, 1 senior technician strive to give you an irreproachable product. The volume of activity allows us to justify these additional costs.

b) The dry ham is a product of high quality:
-Its lean (80 %) and its fat (20 %) can be separated.
-The content in amino acids is important, particularly the 9 months (tyrosine crystals)
-It has a strong flavor, and so less is needed to get the same pleasure.
-It can be part of the of a Southern European diet (Italy, Spain, - South of France)
-Additives are rare and useful:
Salt ( NaCl) 5 in 7 % on MFFd 77 % to preserve
Sodium nitrate ( KNO3) or degraded ( KNO2) 0,25 per thousand to prevent botulism and miscellaneous bacteria.
Cane sugar and corn sugar (1 %) to favor the micro-organisms and flavor-enhancers growth .

Raw materials are selected by a first general sorting corresponding to the product specifications (good sanitary practices), by a second sorting by origin and weight according to finished product desired.

The same is true for the counterpart of the ham = the dry shoulder which is nothing other than a front ham.

Salami is more difficult to define because, like most wines, it is the result of a blend of meats. Ours are made from hams and from hearts of shoulders to guarantee an exceptional lean content (85 %), and the fat of exceptional quality is cut so that it can be removed in case of strict diet. Everything is in the art of the production manager!
